You note them with an exclamation mark- you can't get more exciting than an exclamation mark. And you use them to find out all the probabilities, permutations and combinations for numbers. Like, did you know the n! for 12 is 479001600.

Like you can use it to work out how many seconds are in a week, so like sixty times sixty times twenty-four times seven times six, and then you have to factor in some other numbers...
